4oz Scottish Butter 1/4 pint water 4oz Raisins 4oz Sultanas 4oz Caster Sugar 8oz Self Raising Flour 2 eggs (beaten) 2 level teaspoons bicarbonate soda
Melt butter in pan, add water + fruit, boil for 5 mins Take from heat, put in mixing bowl, and mix in flour, sugar, eggs + bicarbonate of soda Grease and flour 1 x 2lb loaf tin Put in mix mixture, bake in center of oven for 45 mins at gas mark 4 on 180°C/350°F Reduce oven heat to gas mark 2 for 15 mins at 150°C/300°F
