Patricia Scullion's Lemon Freeze

Ingredients

2oz cornflakes crumbled 5 tablespoons caster sugar 1oz melted butter 2 eggs separated 4 tablespoons lemon juice Small can of condensed milk

Method

Blend cornflake crumbs, two tablespoons sugar and butter until well mixed Press all but four tabllespoons into base of container Beat egg yolks in a deep bown until thick and creamy Combine with condensed milk Add lemon juice and stir until thickened Beat egg whites until stiff but not dry Gradually beat in the remaining sugar then fold through the lemon mixture Spoon into container and sprinkle with remaining cornflakles Freeze
